They just seemed to fit this meal perfectly. They were sooooo good!
My husband and I love making these at
Christmas time too, at a time when we tend to crave the comforting foods we had as kids. We each grab 2 spoons and stand on opposite sides of the counter, piling up heaping teaspoons of warm, chocolaty, nutty, and just plain yummy cookies. It somehow brightens our spirits during this magical, yet stressful time of year.
*I have had this recipe for a long time, not sure where it came from*
2 c. sugar
2 c. sugar
1/2 c. butter
1/2 c. milk
1/3 c. unsweetened cocoa
2/3 c. peanut butter
3 c. quick-cooking oats
2 teaspoons vanilla extract
1. Place a piece of parchment paper on cookie sheet, or directly on counter top. Combine sugar, butter, milk, and cocoa in medium sauce pan.
2. Cook over medium heat, stirring constantly, until mixture comes to a rolling boil.
3. Remove from heat.
4. Add peanut butter, and mix until incorporated. Add oats, peanuts, and vanilla; mix well. Quickly drop mixture using 2 spoons onto the parchment paper. Let cool. Store in cool dry place.
5. Pour yourself a glass of cold milk, and enjoy!
